They also contain good amounts of the following vitamins: beta-carotene, vitamin A, C, B1, B2, B6, and folic acid as well as small amounts of fiber and protein.
Since most of the nutrients are contained in or just under the skin, it is important not to peel potatoes when eating them or juicing them.
New potatoes, but not green potatoes are especially rich with all these nutrients.

Arthritis: Like rheumatism, arthritis is an inflammatory condition. The high mineral and organic salt content in potato makes it one of the best anti-inflammatory foods. Slice a potato together with the skin and soak in a glass of distilled water. Drink in the morning before meal.
Burns, rashes and other skin irritations: When applied on the skin, raw potatoes (cut into slices or juiced) have anti-irritating, soothing and de-congesting properties.
Potato juice can be used to treat a wide variety of skin irritations and conditions, including burns, rashes, as well as skin redness, itching and dehydration.

Potatoes are the edible, starchy tubers of the nightshade family Solanaceae.
They are widely cultivated all over the world, due to their popularity as a food, nutritional value and incredible culinary versatility.
Potatoes come in many sizes, colors and textures depending on the variety.
The thin skin can be yellow, brown or reddish, while the starchy flesh is usually white or yellow and its texture can vary from waxy to floury. The texture affects how potatoes are best cooked.
When choosing potatoes, avoid those that have sprouted or those with a "green tint". (See Caution below). Instead, choose new potatoes (smaller ones) which are harvested before they are fully mature. They contain the most nutrients.
Store potatoes in a cool-not cold, dark and dry place to avoid premature sprouting and dehydration. Also avoid storing potatoes in the refrigerator as this will cause the starch content to turn into an undesirable form of sugar.
Finally, avoid storing potatoes in the same space with onions. Each emits gases that are not compatible with each other and will cause harm to both.
Check your potatoes regularly and remove those that have sprouted, spoiled and dried up so that they don't affect the other good potatoes.
Potatoes are among the foods on which pesticide residues are frequently found. Buy organic potatoes whenever possible.
If for some reason you cannot buy organic potatoes, soak them in water with apple cider vinegar and sea salt to remove the residues.
Or soak them in water with a few drops of 35% food grade hydrogen peroxide...follow the necessary precautions when using peroxide...it will burn your skin if you get any on it as well as bleaching your cloths. Then while rinsing it with water use a vegetable brush to remove any caked on dirt before using.
Do not eat either green potatoes or the sprouts that grow on potatoes because they contain the toxic alkaloid substance solanine may cause health symptoms like nausea, diarrhea, stomach cramps, headache, dizziness and shortness of breath.
If you find among your potatoes any that are dehydrated, they are too old to eat.
